Get ready for a fruit bomb! This microlot comes from producer Jhoan Vergara, grown at 1,750 masl in the Huila region. It’s one of the most experimental and exciting coffees we’ve roasted this year.
Fermentation Process:
A bold approach—48 hours of oxidation in cherry followed by a thermal shock at 60°C, and then 100 hours of anaerobic fermentation. The result? A wild and juicy flavor profile that explodes in the cup.

Strawberry, Raspberry, Dragonfruit, Papaya, Pineapple, Banana — all wrapped in a tropical, tangy vibe.
About the Farm:
Las Flores is nestled at 1,730 masl and shares close ties with El Diviso—two farms known for pushing innovation in post-harvest processes. All cherries are handpicked and naturally dried for maximum flavor.
This particular lot also underwent a Washed Anaerobic Mossto process, adding unexpected botanical, tamarind, and prune notes to the experience.
Transparency:
We paid CHF 24.04/kg, including around CHF 2/kg in transport.
The lot was selected during Cristian’s trip to Colombia in November. We bought 35 kg—super limited and super special.
