Yuzu —The Japanese

Yuzu is a character: it may look like a misshapen lemon, but beneath the skin lies a complex and intense world far beyond its smooth, perfect counterpart. It comes, as you might have guessed, from Japan, where it has been used for cooking and seasoning for a long time. And because learning from Japan means learning to enjoy it, it has also become increasingly popular in Europe for some time. The yuzu inhabits its own sumptuous world somewhere where tangerine and lime have reached their taste limits. It gives the lemonade a subtle and decidedly unsweet freshness that is undeniably reminiscent of that one day: back in spring, on the small island of Naoshima in southern Japan, when the deserted temple was bathed in warming midday light and an orange cat died visitors welcomed.
